I love reading cookbooks. While I appreciate a good, go-to, recipes only with no fun antics or stories, I seriously enjoy cookbooks that take you on a culinary journey. Because my friends know this, I traditionally receive a cookbook every Christmas.
This past Christmas I received a book called Toast by Raquel Pelzel. The idea is exactly what you would think. In its entirety, the book is cover to cover toast! What is brilliant about it is that it takes something as simple and comforting as toast and shows you how you can turn it into small culinary masterpieces.
Pelzel splits up the book into toasts for the season. The chapters open up with a simple nod to the season (Winter’s is The Best Cinnamon Toast) and ends with guest chef entries (Spring brings us Chopped Liver Toast with Aleppo Paste and Caramelized Onion by Itamar Srulovich and Sarit Packer).
I’ve heard a few times over the years from acquaintances who believe they can not cook, “The one thing I can make is toast.” Well, this cookbook will definitely change your simple views on toast. No longer will you think of toast as a simple piece of sliced bread popped in the toaster and smeared with butter. You will wonder if you’re going to have toast for breakfast or lunch or even dinner. It’s extremely innovative but not intimidating.
My personal favorite is Winter’s Smashed Tot and Egg Toast! It’s simple, but will rock your world! It inspired me to make a few adjustments and make it my own. So here is my version.
Smashed Truffled Tot, Egg and Avocado Toast
2 Slices of bread of your choice (I used honey wheat)
12 frozen tater tots
White truffle oil
Butter or Margarine
Salt, pepper, red pepper flakes and garlic powder to taste
Toss tater tots in truffle oil and a dash of salt. Bake as instructed on the package. Butter slices of bread and place on medium high heat in a pan until golden brown. Set aside. Mash avocado with salt, pepper, red pepper flakes and garlic. Set aside. Whisk eggs with a splash of milk and prepare scrambled. Set aside.
When tots are finished baking, smash lightly with fork. Assemble toast by placing smashed tots, followed by the avocado and topped with eggs. Garnish with extra pepper and a drizzle of truffle oil. ENJOY!
